Breakfast Burritos

Looking for an easy, healthy meal prep recipe?! These burritos will be your new favorite go to! They freeze really well and help me feel like I’m getting some healthy, quick food in my family when they are all on the go.

Ingredients
  

  • 2 dozen eggs
  • salt and pepper
  • 2 pounds ground sausage turkey or pork
  • 3 tbsp oil
  • 2 28oz frozen hash browns with onions and peppers
  • season salt
  • 3 cups grated cheddar cheese
  • 24 tortillas, burrito size white or wheat

Instructions
 

  • Begin by cracking the eggs into a bowl, mix, and salt and pepper to taste.  Pour into a skillet on medium heat and stir until scrambled.  In a separate pan, brown the sausage until no longer pink and drain off the fat.
  • Drizzle oil in a separate skillet and cover with hash browns.  Cook on medium heat, stirring occasionally, until the hash browns start to brown and become soft.  Season the hash browns with season salt, to taste, while cooking.
  • Place about 1/3 cup each of eggs, sausage, and hash browns on the center of a tortilla.  Then sprinkle with cheese and roll the tortilla into a burrito.  May be served right away or frozen in tinfoil.  When ready to eat a frozen burrito, remove the tin foil and place in the microwave wrapped in a damp paper towel for approximately 2 minutes or until warmed through.
