Christmas Salad
Enjoy one of our favorite salads for theholidays. It’s easy to make and looksbeautiful! And tastes even better!
Ingredients
10 oz. spring salad mix with spinach
1 c. bacon crumbles
1 c. mozzarella cheese
1 c. sugared almonds (see recipe below)
1 c. pomegranate arils
2 c. sliced pears
Dressing
¼ red onion
1 c. sugar
2 tsp. dry mustard
1 tsp. salt
½ c. red wine vinegar
1 c. extra virgin, light tasting olive oil
Sugared Almonds
8 oz. sliced almonds
4 tbsp. sugar
Instructions
- Dressing to taste (may not need all of it, see recipe below)
- In a large bowl add the greens, bacon crumbles, cheese, almonds, pomegranate arils, and pears. Just before serving, slowly add dressing and mix until coated. You can also keep the dressing separate and use on individual servings.
Dressing
- Add all of the ingredients to a blender or food processor and blend until frothy. Store in the refrigerator until ready to serve.
Sugared Almonds
- Place almonds in a small skillet, coated with cooking spray, and sprinkle with sugar. Cook over medium heat stirring until almonds are coated and sugar dissolves and begins to turn a golden brown. Do not over cook. Cool on a piece of parchment paper.
