Begin by boiling the chicken breasts for about 10-15 minutes or until cooked through. I like to add a little bit of salt and pepper to my boiling water to flavor the chicken. Then, shred with 2 forks or cut into cubes and set aside. While the chicken is cooking, also boil the pasta until al dente, about 10-12 minutes.When the pasta is finished, drain and rinse with cold water and place it into a large salad bowl. Add the chicken, salt, pepper, green onion, dressing, mayo, thyme, and ginger and place in the refrigerator for 1-2 hours until chilled, or overnight.Before serving add the celery, grapes, apples, pineapple, and almonds and stir. It’s ready to serve! This recipe makes approx. 24 cups of salad.
