Chicken Bow Tie Salad

This salad is perfect as a meal or a side dish for a crowd!  You can also remove the pasta and serve it inside a croissant!

Ingredients
  

  • 8 cups chicken shredded or cubed
  • 1 pound bow tie shaped pasta
  • 1 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 4 tbsp. green onion chopped
  • 28 oz. coleslaw dressing I use the Kraft brand
  • 2 cups mayo I use Best Foods brand
  • 1/4 tsp. thyme
  • 1/4 tsp. ginger
  • 2 cups celery diced
  • 4 cups red grapes cut in half
  • 4 cups apples diced with peelings left on
  • 2 20 oz. cans pineapple tidbits drained
  • 1 1/2 cups slivered almonds

Instructions
 

  • Begin by boiling the chicken breasts for about 10-15 minutes or until cooked through. I like to add a little bit of salt and pepper to my boiling water to flavor the chicken.  Then, shred with 2 forks or cut into cubes and set aside.  While the chicken is cooking, also boil the pasta until al dente, about 10-12 minutes.
    When the pasta is finished, drain and rinse with cold water and place it into a large salad bowl.  Add the chicken, salt, pepper, green onion, dressing, mayo, thyme, and ginger and place in the refrigerator for 1-2 hours until chilled, or overnight.
    Before serving add the celery, grapes, apples, pineapple, and almonds and stir.  It’s ready to serve!  This recipe makes approx. 24 cups of salad.
