Preheat the oven to 350 degrees and line a cupcake/muffin pan with cupcake liners. In a medium bowl whisk together the flour, baking powder, and salt. Set flour mix aside. In large mixing bowl, cream together the butter and sugar until thick and fluffy. Add eggs and vanilla and beat until combined. Slowly add the flour mixture and buttermilk until smooth, don’t over mix. Divide the batter evenly into the 12 cupcake liners. They will be about 2/3 full. Bake for 20-25 minutes at 350 degrees or until an inserted toothpick in the center comes out clean. Let them cool in the pan for a few minutes, then transfer to a wire rack and cool to room temperature before frosting.
Frosting Instructions:
Place the above ingredients in a medium mixing bowl and mix until combined. It will be a thick consistency. Frost as desired with knife or frosting bag/tips.
